Today went very well as usual. Well not so usual for me, though now that it is day 8 it is starting to feel like I have a hold of this diet, instead of the other way around. Everything today was delicious and I enjoyed it. It didn’t feel like I was on a diet. I am getting used to the portions. I saved all my snacks and ate them while watching TV. I also had a small bowl of grapes.

Scrambled Eggs and Porridge

Scrambled Eggs w/ Cheddar Cheese & Roasted Peppers

Pumpkin Pie Breakfast Porridge w/ Oatmeal Crumb Topping

Lunch: 

Vegetable Meatloaf 

  • Homestyle Glazed Vegetable Meatloaf w/ Pan Gravy
  • Creamy Mashed Yukon Gold Potatoes
  • Thyme Roasted Carrots
  • Shredded Sprouts

Dinner: 

Salmon and Quinoa

  • Blackened Salmon w/ Maple Reduction
  • Golden Raisin Walnut Quinoa Pilaf
  • Grilled Asparagus

Snacks, Fiber and Tea: 

Snack 1: Small Yogurt and fruit

Snack 2: Seed Bar

Dessert: Date Roll
