My Ideal Salad


Finding the perfect salad over the last few weeks has been grueling. Mostly because I would prefer not to eat salad. Second it seemed all salad was bound to be bland.

Eventually I landed upon Salad Creations Santa Fe Chicken Salad. It was delicious. I could down it without even blinking. It tasted fine. Finally a salad I could eat. This salad however cannot be delivered. It takes about 1/2hr out of my day to go get it from my local Salad Creations, then eat it. I would much rather not deal with the pressures of driving back to work in time and sitting at my desk.

So I played around in my kitchen. I tried to re-create the salad. This only ended up in yucky salads being thrown away almost whole at work. Finally I landed on the perfect recipe.

My Yummy Recipe

  • 1/3 box of Organic Girls Romaine Lettuce chopped

  • 2 hand fulls Organic Girl Spring Mix

  • 1/2 container Goats Cheese Crumbles (approx 150 calories)

  • 1 cup Baby Tomatoes (3 handfuls)

  • 1 Sprig Mint

  • 1 Mini Cucumber sliced

  • 1 handful Green Bell Pepper finely chopped

  • 3 Tbsp Salad Dressing

  • 1 small handful Dried Cranberries and Sunflower Seed Mix

  • 1 chopped Soy Sausage or 1 handful Croutons

Combine ingredients in a large bowl. The toppings can be stored separately if you are making a box lunch. The only things I wouldn't throw in there is the crotons as they would get soggy, and soy chucks that I prefer to warm-up and then add to my salad just before eating.
